
Day 5 after surgery. For breakfast we had 8-minute noodles. Everybody’s saying how unhealthy 2-minute noodles are (just look at all those numbers in the list of ingredients). I agree and I’m trying to avoid them, especially avoid making them for kids. But from time to time I buy them for my daughter at the school canteen (simply to vary her menu at school as there is not a great many items I can buy or that she would eat… so occasionally those dreadful noodles find their way onto her plate). Last time she had it, she told me how one of her school friends was looking at her lunch with very big eyes. She asked if we could make her some 2-minute noodles when she comes over for a playdate because her mum would never buy her any in the shops. This totally surprised me. In a positive way. I didn’t think people are being so very careful what they’re giving their kids to eat. On the other hand… come on… if a kid wants to taste something, why not? Sorry, I’m stirring away from the subject. So, a few months ago I stumbled upon (actually my hubby did
) a recipe for homemade 2-minute noodles. You can’t really make them in 2 minutes, but you can in 8, which is absolutely fantastic. Plus they taste waaay better than the store-bought stuff (at least this is what our household thinks
). Not to mention how nicely natural they are. And if you use vegetable stock instead of chicken, you will get a simple and quick vegetarian dish that will amaze your vegetarian guests. The only problem with this dish is that it is made in Thermomix (or any other similar appliance… for example, I’ve got Bellini, which I refer to as ‘my Bella’
). I’m pretty sure you could easily make this on a stove (I haven’t tried though… if you try, please let me know how it went). Maybe you would need a few more minutes, but probably not much more than 8. That is the only difference I can think of. Therefore, if you like this recipe, please don’t give up if you don’t have TMX, Bella, or similar. It is really nice, even somewhat exotic, so definitely great to share and amaze.

INGREDIENTS
- 500ml water
- 1/2 onion
- 1 carrot
- 1 tablespoon sesame oil
- 1 teaspoon Bella-made chicken stock paste (or 1 chicken stock cube)
- 3 teaspoons soy sauce
- 1 teaspoon honey
- 80g frozen peas
- 2 instant noodle cakes (I actually use 2.5 so to have less liquid in the end, but I guess this depends on what you like)
- salt and pepper if needed (I never find it necessary to add)
- sesame seeds to sprinkle when serving
METHOD
- Put the kettle on.
- Chop onion and carrot on speed 6, 5 seconds.
- Change the blade (from chopping to blunt). Only now scrape down the veggies (if you do this first it will make it harder to switch blades). Add oil and sauté 3 minutes, 100 degrees, speed 1.
- Add soy sauce, honey, chicken stock, boiled hot water, and peas. Cook 100 degrees, 1 minute, speed 1.
- Break noodle cakes in half (or smaller pieces) and add to Bella. Cook for 2 minutes, steam setting, speed 1. Check that noodles are all submerged, if not give it a stir. Then repeat: steam setting, 2 minutes, speed 1.
- Transfer noodles to a bowl, sprinkle with sesame seeds and serve (adding more sesame seeds
).
